Bird in Hand Nest Egg Shiraz is sourced from estate vineyards near Balhannah and Woodside in the Mount Lofty Ranges at 400 metres elevation above sea level.
The Adelaide Hills are a renowned source of premium cool climate Shiraz. Yields are kept low and the fruit harvested in the cool of morning.
The handpicked batches are kept separate until blending. The grapes are destemmed and crushed into small open fermenters with twice daily pump overs for a least a week.
If the wine achieves Nest Egg standard it is pressed into tightly grained French oak to mature for 18 months.
Deep dark crimson, Bird in Hand Nest Egg Shiraz is a limited edition wine with vibrant dark fruit flavours, silky tannins and a long finish. Cellaring potential is 12 years.
